OUR COMMITMENT TO
Erasing Waste
We aim to conserve resources in all aspects of our business in order to sustain our planet. We conserve like our life depends on it. Both in our kitchens and service environments, we aim to decrease the environmental footprint of our operation. In the kitchen, we track every piece of food waste that we produce. With the data from our partner Leanpath we are able to track and reduce waste each week. In our service environments, we encourage reusable serviceware and alternatively use compostables. If there is leftover food, we keep the food at safe temps and donate it to local communities in need via our local nonprofit distribution partners. In 2022, we were honored by StopWaste and received their Excellence in Food Waste Prevention award.

Responsible, Local & Independent
We prioritize sourcing from responsible, local, and independent suppliers. This means that we source:

WOMXN & BIPOC OWNED
We are actively transitioning more of our spending to go towards building equity in our economy. In 2021, $141,000, or 13%, of our purchasing dollars were spent with womxn and BIPOC-owned businesses. In 2022, our goal is 15%.
Respectful Animal Husbandry
We only source meat from farms and ranches who raise their animals in a way that complements natural behaviors. Our meats are never treated with synthetic hormones or antibiotics, and are fed non-GMO, vegetarian feed. We rarely serve seafood and when we do, we only source from small family-owned fishing vessels who work to conserve fisheries for future generations.
